Poached eggs every morning? You probably thing I’m crazy. But stay with me for a second, they actually aren’t as difficult as they look. I used to think of breakfast as being a hassle and quite the conundrum, tbh. I wanted something delicious, something healthy, but also something quick. I’m a type 1 diabetic, so it’s important for me to be aware of eating balanced meals. As much as I love a bowl of cereal, I’ve learned I feel much better by having something low carb and with protein in the mornings. This is where the easy, morning poached egg comes into play! They’re quick, almost fool proof, and so easy to mix and match with. Every time I share a poached egg breakfast, my DMs get flooded with messages commenting on how delicious or complicated it looks so let’s break it down!
Easy Poached Egg
Materials
- 1+ eggs the fresher, the better
Instructions
- Heat the water on high (I add vinegar to my water when I first boil, just a very small amount!) until it comes to a boil.
- Lower the heat until the water is at a bare simmer (just a few bubbles coming up every so often)
- Crack the egg into a separate bowl
- Begin to stir the water as you gently slide in the egg (1 at a time) to the water. You can repeat this step with more eggs. I recommend preparing them in separate bowls first to save time.
- Turn off the heat, cover the pan + set a timer for 4 minutes
- Remove the eggs (gently) with a spoon.
- Place eggs on a paper towel on a plate to soak up the excess water. Trim off any excess egg white bits.
