Each week I go out with Margot and we explore a ne Each week I go out with Margot and we explore a new area of the city. So far we’ve been all over Østerbro, Frederiksberg, and Christianshavn 🌸 There are so many quaint little streets I never knew existed and I’ve been photographing them to make Margot a book of all the places we explored during her naps.
Motherhood is so exciting, exhausting, and confusi Motherhood is so exciting, exhausting, and confusing all at once. It’s a constant mix of every range of emotions. It’s the hardest job I’ve ever had. But also the most rewarding. It’s been a little under three months, but it’s everything I could have wished for. Thank you Margot for making me a mom. I’ve never been so tired yet so happy and fulfilled all at once. 🥹 You’ve taught me so much already and I can’t wait to see what’s next 💞

Easy Morning Poached Egg

Poached eggs every morning? You probably thing I’m crazy. But stay with me for a second, they actually aren’t as difficult as they look. I used to think of breakfast as being a hassle and quite the conundrum, tbh. I wanted something delicious, something healthy, but also something quick. I’m a type 1 diabetic, so it’s important for me to be aware of eating balanced meals. As much as I love a bowl of cereal, I’ve learned I feel much better by having something low carb and with protein in the mornings. This is where the easy, morning poached egg comes into play! They’re quick, almost fool proof, and so easy to mix and match with. Every time I share a poached egg breakfast, my DMs get flooded with messages commenting on how delicious or complicated it looks so let’s break it down!

The key to a perfect poached egg is gentle heat to give your eggs a firm white and a loose yolk

Easy Poached Egg

Materials

  • 1+ eggs the fresher, the better

Instructions

  • Heat the water on high (I add vinegar to my water when I first boil, just a very small amount!) until it comes to a boil.
  • Lower the heat until the water is at a bare simmer (just a few bubbles coming up every so often)
  • Crack the egg into a separate bowl
  • Begin to stir the water as you gently slide in the egg (1 at a time) to the water. You can repeat this step with more eggs. I recommend preparing them in separate bowls first to save time.
  • Turn off the heat, cover the pan + set a timer for 4 minutes
  • Remove the eggs (gently) with a spoon.
  • Place eggs on a paper towel on a plate to soak up the excess water. Trim off any excess egg white bits.

Notes

Fresh eggs work best for poaching. Do not salt your water as this will cause your egg whites to break up and get wispy. I like to add a splash of vinegar to my water–the vinegar helps the proteins in the egg white coagulate. The vinegar does not affect the taste of the egg either! 
My favorite poached egg combos:
1. Salmon + creamcheese
2. Asparagus + Hollandaise sauce
3. Croissant + Salmon
4. Brioche bun with cream cheese, salmon, and fresh greens
5. Everything but the bagel seasoning
6. Oatmeal and parmesan. Trust me on this one.
