At the start of 2021, I just felt sluggish and my skin would not stop breaking out. I felt I was really struggling. I read about the benefits of incorporating green juice into my diet and decided to give it a go. For the last six weeks, I’ve started each morning off with a green juice.
I am happy to report that there are noticeable effects on my skin and my energy levels. My skin is much more clear and I haven’t been reaching for that extra cup of coffee as often. It’s not only tasty but filled with antioxidants and nutrients that will make you glow from the inside out. In addition, green juice is highly hydrating. Proper hydration is an essential component in skincare and gut health. I also top mine up with Vital Proteins collagen powder for a little extra added benefit.
The easiest way to to enjoy the benefits is to drink it first thing in the morning. It’s best on an empty stomach and at least an hour before your first cup of coffee. Research shows that this allows rapid absorption of the nutrients. Our bodies are also more acidic in the mornings and the green leafy vegetables help balance out our pH levels, which keeps you energized.
I like to make 3 days worth of juice at a time so that it’s not a daunting task each morning. After making it both a blender with a sieve and with a juicer, I prefer the juicer as I can make more at a time. However, I do find them equally easy and efficient.
You can mix up your recipes, but the one below is definitely my favorite. The ginger gives the juice a nice kick, which I especially love in the morning. It perks me right up.

Ingredients
- 1 cucumber
- 1 bunch celery
- 1 handful spinach
- 1-2 apples any variety is fine
- 1 lime peeled
- 1-2 inches fresh ginger
- 1 scoop collagen powder
Instructions
Juicer
- Juice all ingredients, no peeling or chopping necessary (except for the lime)
- Transfer to glass bottle
- Mix in collagen powder
- Optional: top up with some coconut water or tap water for extra hydration.
Blending
- Chop ingredients into smaller bits
- Add all ingredients to blender
- Top off with coconut or regular water until everything is covered
- Pour blended mixture into a bowl through a sieve to strain out the fiber. This step is optional but essential if you want the fresh juice texture.
- Transfer to glass bottle
